Push your Home button two times and just tap on the tiny microphone you see. Dictate your text and click the icon a second time when you are finished.

Go to settings and change them to stop the constant barrage of Wi-Fi network questions. An option that asks you if you want to join networks exists and it can be changed. Turn that setting off, and you will finally be rid of the constant notifications.
